My career didn't start in a fancy palace; it began in the trenches of Aussie kitchens, where I learned that if you aren't organized, the kitchen gods will smite you.
I traded sleep for skills in production and service, proving that teamwork makes the dream work (and keeps the soufflé from collapsing).
My cooking is basically a tasty identity crisis. I’ve got Brazilian soul food in one hand and Aussie fusion vibes in the other. Imagine a samba dance inside a multicultural food court—that is my flavor profile.
Australia taught me new tricks, but my heart still beats in rhythm with a pressure cooker full of black beans. I’m constantly studying to stay sharp, blending 'grandma’s secret recipe' with 'wait, I can do that with liquid nitrogen?'
I launched Meals by Mike to broadcast my edible autobiography from Australia to the rest of the planet.
Whether I’m serving up a rustic Brazilian hug on a plate or some fancy global experiment, my mission is simple: feeding humans until they start making happy noises and connecting with each other.
I am a Brazilian engine, fine-tuned by Australian grit, and fueled by a global imagination.
